Tioga Downs Welcomes New Executive Chef


Mark Henry, a 25-year industry veteran, joins the resort’s culinary team as its new Executive Chef.


Nichols, NY—Tioga Downs Casino Resort is pleased to announce the appointment of Mark Henry to the position of Executive Chef.

Chef Mark joins the Tioga Downs team with more than 25 years of experience in the industry. A graduate of the Culinary Institute of America, Chef Mark’s resume includes leadership positions at four- and five-star restaurants and hotels across North America, including the Seven Feathers Resort & Casino in Canyonville, Ore., the Plaza Hotel in New York City, Marriot’s Camelback Inn in Scottsdale, Ariz. and the iconic Eden Roc Resort & Spa in South Beach, Fla. Most recently, he served as the Senior Executive Chef for the NFL’s Minnesota Vikings. 

His approach is fresh and puts an emphasis on the farm-to-table philosophy. Chef Mark’s excellent leadership skills, captivating personality and dynamic energy motivates employees in both the kitchen and the dining room. 

In addition to his degree in culinary arts, Chef Mark is a member of the American Culinary Foundation (ACF), participated in the Return of the Great Regional Chefs event at the James Beard House and, because of his commitment to using sustainable products, is green certified. He has also been honored with numerous accolades, including Zagat awards, the Distinguished Restaurants of North America (DiRoNa) Award and the Greatest of the Grape People’s Choice Award for food and wine pairing. 

Outside of work, Chef Mark is committed to strong community involvement and supports the March of Dimes, Share the Strength, No Kids Go Hungry organizations and is a spokesperson for breast cancer awareness.
